All you need are egg yolks, a neutral oil (grapeseed is best, IMO), some acid in a combo of a little vinegar and lemon juice, a little good mustard, and some salt. You can also add garlic or herbs for additional flavor but that's optional. Anyway, add all the stuff less the oil and whisk is all together (you can use a food processor as well) until it's smooth and well composed. Then, while still whisking or running the food processor, slowly add the oil - at first, a few drops at a time and then, as it comes together, a steady drizzle. Before too long, you'll recognize this as mayo. Taste it, add seasoning if necessary (salt probably), and do the final blend. It will be good.

That's almost every day during the summer and fall. I can easily eat upward of a dozen tomatoes in that fashion in a day, but I usually slice them and lay them out on a plate to ensure more even coverage of salt and pepper. I do prefer AA's method, but if I did that, I'd be eating a loaf of bread a day, so I try to limit myself to only one or two of those...

I use low sodium salt, it's half sodium, half potassium. And I use that sparingly, for the reason you mention...

If you're fairly active, have decent kidneys and no heart failure, sodium intake isn't that big of a deal.
