This one I would try:

Fedora Dorato ($13) at Fedora
"The taste of the West Village!", Fedora's cocktail menu proclaims. Well, we wish we could find drinks of this caliber all over the neighborhood. Famous Grouse is the backbone for this stirred, properly chilled concoction of Scotch, Cynar, and Cocchi Americano. It's smoky and herbal with an expected bitter kick, but lightened by the crisp, lively Cocchi—perfectly balanced.

Another one I would try, although I'm not much of a rum drinker. And, FWIW, I don't know what most of the ingredients are like on their own (cynar, cocchi, apperol, gran classico, etc), but these drinks weren't sweet at all, very smokey with the scotch flavor being highlighted, not sweetened. In fairness, I did see a few scotch based cocktails that looked like they'd tend towards the sweet side, and I didn't try those, but I probably would if it was made right. Anyway, I'd definitely try this one:

Grandyman at Amor y Amargo ($12)
You go to Amor y Amargo for strong, bitter, funky cocktails, and the Grandyman is no exception. Here, Famous Grouse joins Banks 5 Island rum, two blend-friendly spirits made herbal and downright savory through Salers, Amaro Nonino, and Bitter Truth's Creole bitters. It's a drink you sip again and again and never quite get a handle on—and I mean that in a good way.

about 4 to 6 eyedrops in a dram of scotch is worth it for me.

Reading AA and hedge go back and forth is made better when visualizing them in top hats, canes and AA smacking hedge with white glove at the onset. Well done, sirs.

(I am okay with scotch mixed drinks, but a good single malt stands on its own...it's like having a margherita with premium tequila)

Again, not sure about the other ingredients in this one, but I bet I'd like it:

The Barrymore ($16) at The Rum House
Up in the Theater District, Kenny McCoy (also of Ward III) named this drink to honor John Barrymore, and the Barrymore Theater across the street from the Rum House. An experiment to unite Scotch and an amaro, the cocktail starts a rinse of Yellow Chartreuse that's flamed in the coupe, with the stirred Bruichladdich 10-year and Ramazotti poured in, a flaming orange peel garnish. Powerfully smoky on the nose, but balanced by the amaro and citrus oils.

It appears that most of the mixologists agree with you. Most of these cocktails are made with blended scotch or at best a 10 year old single malt....

It certainly appears as if you've found your stride: scotch cocktails. Not just any scotch cocktail, but EXPERTLY MADE scotch cocktails. I wish you continued happiness with your new drink of choice. Heck, I may send you a package of those tiny umbrellas they use as decoration in such things. Maybe a rhinestone studded swizzle stick, too.

I should think most people who enjoy good cocktails would prefer them expertly made, the same as most good scotch drinkers would prefer their scotch expertly made. Unfortunately, I do not think I will be finding any of the former around here, so it's back to the latter for the time being...

The past conjunctive is used in subordinate clauses and refers to unreal or improbable present or future situations. "If I was having it with an expert on scotch" - since
you weren't having a discussion with an expert on scotch, 'were' would traditionally be favored over 'was.'

It's true that - traditionally - the past conjunctive form of be is were for all persons, including the first and third person singular. However, today I/she/he/it was is more common while were is mainly used in formal styles and in the set phrase if I were you. So the informal usage of was in "If I was having it with an expert on scotch" is okay, too.
